Adopted cat won't come out from hiding

I adopted an adult cat (3 years old) from a local shelter a week ago and he rarely comes out from hiding under my bed. About two or three days after I got him he did wander around my apartment, but the last two days he refuses to come out from hiding except to eat and use the litter box. He only seems to eat and relieve himself in the middle of the night though.

This is my first time adopting an adult cat, so is this normal? I expected him to be frightened, but the fact that he wandered around my apartment and now refuses to even budge has me confused. Can anyone offer some advice?
