BMO GIC

I have a large sum of money that I want to put aside so I don't impulse spend it and just have a sinking fund. Any thoughts on GIC's? Looking into BMO GIC's but not sure which option I like. I want something locked for 1-3 years and should be able to withdraw if I wanted to. Any suggestions would be great thankssss.
