Setting up something long term for pollinators and birds

We moved into this house a year ago, and the back of the garden is quite overgrown and wild. There's some things I know I can't get rid of easily like bamboo. But I'd still like to tidy it up a bit, and any ideas as to what to plant, how to improve it, would be awesome.
I live in Austria with lots of fields around, in just learning about permaculture, and something that is not only nice but actually beneficial to bees, birds, and the rest would be ideal.
