Feed rate trim question. Envirofire meridian insert.

When we bought our pellet stove the company who put it in told us not to touch the feed rate trim or the combustion blower trim. My question is 1. Can we actually mess with it what does it actually do. 2. If not supposed to touch it why the hell add it lol.
