Can someone recommend a good mini pc for music production?

so here are the boxes i need to check

-budget conscious so ideally id like ddr4 or 5 , but with the base model having a low amount as i can get cheap ram elsewhere and install, (so upgradeable)

-at least 500gb ssd

-multiple monitor, support for a touchscreen monitor

-cpu that can handle ableton live (music software) and run an audio interface with low latency

i know its possible, i have a 2013 imac with 32bg ram i7 1tb hdd, and that thing runs like a champ, but lets face it, an equivalent mac mini would cost my first born, and os doesnt matter. THANK YOU!
