MSI Ventus 3080ti crashing to desktop

While playing games (any game at all, even basic ones) my computer crashes to the desktop with no error message. When I monitor the GPU utilisation it always randomly surges between 210mhz and 1800mhz for a few seconds, even when on the desktop and not playing games. The temps are always low (50-75 degrees). I'm not sure if the random surges are causing the crashing. Can anyone offer any advice. The latest drivers are installed, I have an 850w Corsair power supply.

Any advice? I’ve tried undervolting and the issue still persists
