My DM casually mentioned the Absalom wave riders in a conversation, and now I'm obsessed.

Me and my group is starting on a new PF2e campaign starting at level 1 or 2. My DM casually mentioned the Absalom wave riders, a group of knights who ride Hippos, and now im obsessed with the idea of a Absalom Waverider Gunslinger. What is the best way to make that happen? I can go any class really, but I would prefer Gunslinger over anything else. The most important thing is the hippo rider thing. If this isn't possible, ill understand but I'm loving this character idea so far.
