We just had our super audit a few weeks ago and the big wig told us we are never supposed to have backups being kept in the rice holding cabinet. My location does so much business that if we dont have backups they are literally waiting on every single batch of sides even if someone is cooking back to back doubles with no downtime. To be clear, i'm the supervisor of my store, and not even the most physically fit people on my team can keep up with the pace without having backups in the warmer. I just wanted to see which pandas keep backups or if any do, because they expressly told us "no panda express keeps backups of sides" but i have already heard differently from employees of mine who have worked at other pandas.
