Paleo cajun cuisine?

First of all, I'm going right out there and say I HATE HATE HATE cauliflower, so let's just not go there WRT the rice. I want to go paleo, but I love my Cajun food. I can duck around the roux in Gumbo, or use a nut flour for it, but Cajun almost all has a form of rice in it, gumbo uses it, and Jambalaya is a rice dish. I was thinking of either scrambled eggs or a pine nut or almond rissoto to substitute for rice. Am I just wishful thinking here, or am I missing a much better idea? Also, since I'm a bit of a gumbo nut, I have a surfeit of File, is there any way I can use File as a thickening agent now that the flour bin is off-limits, or is the File still a one-shot spice in the rack?
