Way around visa interview times?

Looking for info on the B2 visa application and specifically interview availability. I have an Irish passport and Canadian Permanent Residence, I live in BC. I was hoping to do the PCT next year but the next available appointment is May 2025!! Before I buy this slot, and change my plan to 2025, Which is heartbreaking. I wonder if they sometimes have other interview spots become available? Or if anyone knows a work around, legally, that I could make this happen for next year.
