Diet advice for lazy people

I got recently diagnosed with PCOS and understand the importance of having a low-carb / high-fat diet. However I have depression and ADHD and eating has always been a struggle for me. Normally I am happy if I can eat enough calories in whatever form. Of course most of the quick and easy meals I can think of are really high-carb (pasta, etc). I'm not looking for perfection, I'm looking for easy enough changes that I can implement and actually maintain. Thanks all for any leads :)
