Learned something new, but it is not a biggie though

ever since, I bought a new smoker.

during the summertime can be pain in the butt with the temperature rising after setting at 225. the temp will rise to 240-250 on hot days (p.s. I will built a shade over my smoker in the future). last time, it hits at 275 due to sun hitting the smoker all day.

anyhoo, I decided to set the temp at 200 especially on the hot days and the temp remains below 230 for the last few hours. mhm I think I made a discovery for myself after setting at 200 to smoke meats on hot days. if the day is cooler like during wintertime or early springtime, then it would make sense to set the temp at 225 where it will be steady. awesome!
