A lot of mornings, I end up just having coffee for breakfast (because I’m not hungry, or because I get distracted by my 2 toddlers). But on mornings I do, they tend to be pretty calorie-heavy and I’m still super hungry by the time lunch rolls around and then I end up with very few calories left in the budget for dinner.
But this morning, I made scrambled eggs and hash browns for the toddlers’ second breakfast (they usually have 3 or 4, it’s a whole thing) and said screw it, I’m having some too. But for 2 large eggs, 3/4 cup of hash browns, and half a pear it was only about 300 calories! And I feel like I indulged because hash browns are delicious, and I’m still feeling full an hour later. I don’t feel guilty, or like I’m going to have to restrict myself a lot during lunch or dinner.
