Why do we use they/them pronouns instead of something else?

To me they/them is a collective meaning multiple people but someone who is non-binary is still just one person.

So for a person identifying as female we use she/her/hers, for a person identifying as male we use he/him/his, so why not use something else for those that use the "they/them" pronouns?

I remember reading about ze/hir/hirs once, is that still a thing?
