Why, after millions of years without filtered water, can’t we drink water straight from the wilderness?

It seems incredibly dark that we’ve evolved to a point where we can’t safely consume water from nature. Around when (which year) did we start being unable to safely consume natural water as humans, and why? If filtering water has only existed for a small portion of human history, why would we subject ourselves to the incredible danger of not being able to survive in the wilderness? This should be one of the most pressing issues: you can’t drink something as fundamental as water (the most fundamental substance on earth) without paying to use people’s filtration systems. Sounds incredibly apocalyptic and doomed.
