Why is that the way fruit & vegetables are cut has such a (perceived) impact on their flavor?

I love regular fries, steak fries, waffle fries, curly fries, but I cannot stand crinkle-cut fries. They're gross.
I find carrot sticks to be much better and fresher-tasting than baby carrots.
Eggplant tastes much better to me cut in strips the long way than in circles the short way.
I love zucchini all kinds of ways, but it's a completely different vegetable depending on how you cut it.
I know I'm not alone in this, I've spoken to others with similar opinions.
So why is it?
