Why do Europeans so often pick at Irish Americans, Italian Americans etc?

If someone is Chinese American but their family has lived in the US for generations we would all agree they are still allowed to consider themselves Chinese. I feel like it's the same with any other non-white group so why cant European Americans acknowledge theirs?
