If a country wanted stronger/weaker currency could they trade them?

Like let's say the Chinese Yuan reached insanely high value making China have a bad time due to high currency value, then the Euro crashed and burned so hard they were barely worth anything.

Could they effectively in any legal way trade currency?

China adopts the Euro and prints it while the EU begins to use the Yuan and print them there.
