I've been sort of iterating on and combining some stuffed pepper recipes I liked for awhile, and I think I am close to having a really good recipe. But it just needs one other thing and I'm not sure what.
The recipe so far: - 4 Green peppers, cut in half or on top - Red/yellow peppers, diced (I don't like them whole) - 1 yellow onion, diced - Minced garlic (about 4 or 5 cloves) - 2 Jalapenos, diced - 1 can black beans, drained and rinsed - Tomato sauce, not a whole lot, maybe 1/4 cup if not less. - 1 lb ground beef - Cooked rice - Mozzarella cheese to taste - Salt, pepper, italian herb seasoning
Bake peppers about 10 min. Saute diced peppers, onions, and garlic. Season and cook beef. Mix beans, tomato sauce, and rice. Fill peppers, top with cheese, and bake until cheese is melted.
So far, I think this is a pretty good recipe. The jalapenos I tried recently really made a difference, I like spicy foods. But it's just missing something, something to just really bring out the flavors. I'm almost thinking ground mustard or something, but I don't use it a lot and not sure if it would work. I tried sour cream before but thought it kind of overpowered everything.
