Why does Coke Zero develop a cinnamony/nutmegy taste when it's been sitting in a glass for a while?

I know this sounds very oddly specific, but it's something I've noticed. I drink a lot of Coke Zero, and it normally just tastes like...well...Coke Zero, but every so often there'll be a little bit left in a glass that I forget about for a while, then when I finish it off, there is a distinct taste of cinnamon and nutmeg that normally isn't there. Has anyone else experienced this, and does anyone have any ideas what could be causing it?
