Why do some shrubs stay green in winter, while most leaves freeze?

I assume that leaves are mostly made up of water. It is therefore no wonder that they freeze - the frost destroys them. But why do some plants are green even in winter, while others fall? For example, laurocerasus officinalis - cherry laurel - prunus laurocerasus?
