If a stepparent ever went bowling with their spouse and stepkids then what name would they put down for themselves?

Would they put their real name down because the kids already know their real name because they already know that they aren't their biological parent or if the kids respect them and/or the biological parent is not in the picture then would they be put down as mum/dad.
