Why is gas inflation proof?

Everything else from groceries, to cars, houses and everything in between has gone up in prices. And the explanation that we’re given is that money inflates over time.
Why isn’t gas prices subject to this phenomena? Gas has been, at least for the last 20 years, somewhere between $2 and $4.
How is this possible? And are there other things that are “inflation proof” or is it just gas that behaves this way?
