Why do some people treat you weirdly when you're nice / romantically interested in them ?

The other day, I saw this beautiful girl in the library and I decided to approach her. I asked if I could sit beside her and she said yes. I start studying and would just break the ice and get the convo going. We had a conversation that lasted roughly 1 hour and her behaviour kind of changed halfway through.

She asked me why im in the library on a Sunday and I said just to get out of my apartment and study for my upcoming exam and she said "aw that's so sad". I told her no not really, I like going outside and being around people. She all of a sudden had to get going and I asked if shed like to get something to eat and she was like "you mean like a date?' and I said "im just asking fi you'd like to eat" (im not even fully sure if I completely like her but I was interested to know her a bit more) and she quickly said no I have a bf and left.

Point being, she told me how she doesn't like doing presentations and I volunteered my insights on presenting and how I like being challenged in front of others especially in class as it gives me an opportunity to engage in fruitful debates etc. I even said how I like striking up convos with classmates near me since a lot of people are introverted in my classes.
