Why do so many classic books take the form of someone, often unrelated, retelling events?

You see it a lot in older books. Frankenstein was told from the perspective of Captain Walton. The Great Gatsby is told from Nick's perspective, who was mostly an observer of the story. And a lot of HP Lovecraft's books were written the same way.
