Why do ex-alcoholics continue counting their time sober after a few years?

I want to preface this saying I have the utmost respect for anyone who can overcome an addiction. I've quit cigarettes and cocaine and other things, and it's absolutely one of the hardest things a person can do.

Once you're sober for a year or two, why do you still consider yourself an alcoholic? Haven't you grown past it and changed into a new person who just doesn't drink? I see the 5 year, 10 year, etc chips that people can get from AA, and I don't understand why someone would continue going to AA after being sober for that long.

With respect, why can't they move on?
