Thawing meat in a lunch box?

So I had an idea: I'd like to pack a lunch. I would prefer to freeze the lunchmeat I use for sandwiches. Hypothetically, could I take a package of lunchmeat from the freezer, and thaw it out in my lunchbox with an ice pack? I figure I can just assemble the sandwich during my lunch.

I would probably eat the sandwich in about two hours or so after packing, so would it be safe and thawed by then? At least for an individual serving. Or perhaps I could microwave it when I'm ready to eat?
