why does fixed hot water have dirt

My buildingā€™s hot water was off for a day and a half while they were fixing the boiler. Itā€™s finally back (yay!) and they advised us to run it for a while because itā€™s dirty. It certainly is dirty and itā€™s leaving a lot of dirt and residue in the tub and sink. I understand itā€™s ā€œsedimentā€ but where exactly does this dirt come from or how does it get into the water supply? I want to understand how this works.
