Why aren't state fairs a big deal in most states?

I just got home from my third day at the Minnesota state fair this year. The Minnesota state fair is a big deal. 12 days, all kinds of interesting food and drinks, it's a chance for a lot of rural farmers and kids to show off animals and crafts and the like. It's a beloved cultural tradition in the state. But, it's my understanding that this just isn't the case in pretty much every other state, except for maybe Texas. Why is this? I can understand in some states, like Wyoming, but why not in say California or Illinois?
