Why do you pay in restaurant at the end instead upfront?

Maybe it's more of a fancy restaurant thing, if so then sorry, but I don't really understand the concept.
You want a meal, so you choose it knowing the price, pay for it, and then get it. Why is it so common to order it, wait after getting and eating, and then pay?
No offense, I just wonder if there is some reason for the shift, or just it being part of the culture, or something else going on?
