During war, why are ambushes not considered war crimes considering their nature?

As in, the definition of an ambush is to attack the enemy when they least expect it (usually from behind or from cover), making it a blatantly dishonorable act because the ones on the receiving end are not expecting the attack.

So why are such attacks allowed during wartime? Why aren't wars decided strictly by honorable face-to-face combat?
