Why people say that workout or diet video or influencer is giving advice that won't work?

I mean I get if they looked terrible. However, if someone promotes a diet and they are in great shape and others do it and they are in great shape.
If someone gives a work out routine and they are healthy and in shape and others follow I'm gonna think that its good.
I get that not all diets and workouts work for everyone but imo I'm not sure if there's a wrong way or anything to diet and workout routine as long as your doing it? I could be wrong.
