Why do some animes have more than one English translation for subtitles?

I've always found this rather frustrating. When I'll first watch a great anime somewhere (usually Netflix) and am enraptured with the depth of the English subtitles. Then time passes and when I go back to revisit it, perhaps on the same platform or just clips on YouTube, the wording is altered a bit.

Like the speech Armin gives in Eren's honor on Attack on Titan, here's two different versions I cam across

"For the glory of the human race, I beg you! In my final moments before I die, permit me to explain his strategic value!"

Version 2

"Praying for the glory of humankind, I shall elaborate on his strategic worth with all the time I have left!"

Now, neither one of these are bad (and if I recall correctly, I'm not even sure if the first was what I initially saw) but most of the time, some dramatics or feelings get lost when these changes are made.

I'm watching Food Wars currently and the different are more extreme for sure. And in all the scenes where they show a character in a cool pose and display their nickname (especially prominent in the Curry episodes) there aren't subtitles at all for the names they receive. Or in any scene where the subtitles should be like if a character is reading a paper or text.

I just wonder how/why this occurs. Perhaps I should get on Crunchyroll to see if this different is there too but I just find it annoying. Probably wouldn't if I'd only known the one version you know? :P
