How do I ask a server at an Italian-American restaurant for al-dente pasta the way it's done in Italy?

I noticed that Italian pasta's "al-dente" is chewy, but much firmer, and I miss it so damn much. I don't know if this is a thing local Italian restaurants in America could do if I asked, or if I've just been missing out this whole time.
