Disabled gamer: Custom controller circuit boards

I have a friend who has very little use with one hand and generally needs to use controllers one handed. I want to make her a custom switch controller. Is there any circuit board out there that I can use for a switch controller and just run all the buttons and such to it? Doesn't seem like Arduino will work unless someone knows something I don't.
