How is that not copywrite when people straight up play

A song on the guitar. I can see when you play parts of the song & your teaching people how to play it for educational purposes but there are people doing covers of the song & they do a good job & play the song just as it is. I'm not really mad but I'm scared to play any bit of a song on my small channel that gets 20 views & I do a poor job. Also I see I lot of people actually play the real song over what they are playing with the drums, I find it annoying b/c I want to hear the person playing the song not the actual track of the song. But that's beside my question how do people get away with that?
