Service charges?

First time cruiser and trying to make sure I prepay everything I need to before I leave. I keep seeing people talking about the gratuities that are added on daily ($20/per person). From my understanding that does not cover tipping your servers or bartenders, correct? When I booked I got the free at sea package. In my itemized bill I see a beverage service charge as well as dinner service. Is this the gratuity for the package? If not, where can I go to pay that in advance?
