What's a good defense build for early, mid, and late game?

I've got this game basically since launch but I always focused on the damage portion of the weapons and now that I'm basically bored out of my mind with the same charade I've been doing for about 1k hours now I wanted to spice things up and try a defence build from the ground up with a new guy and all So came the question what are some good defense builds. Btw I want to focus on Lance and/gun Lance

Edit: Forgot to add that any food recommendations would also be highly appreciated cuz I only ever ate for feline insurance or the recommended platter thingy
