Is there any fix/workaround for chests in the Nether (and End) giving the same loot every time?

I currently have in my inventory 6 sets of diamond horse armour, 6 sets of gold horse armour and 6 gold bars, all from a single nether fortress.

While this is more horse armour than I have ever seen before and I am stoked, this clearly seems to be a bug (or glitch?) to me.

I've found a number of other posts reporting this kind of thing in the Nether, and also in the end. Is there anything I can do about this?

Apart from wanting to explore for different kinds of things, I got some great items this time - I might not be so lucky next time. So I'd like to be able to avoid/reset this if it's at all possible.
