Older dudes with perpetual torso flab, what did you do?

I'm 51m. In good shape. Lift at least 5 days a week and pepper in BJJ also. I'm 5'10 and about 210. My legs, shoulders, arms, glutes, are lean and relatively ripped. Like not an ounce of bad fat. My chest suffers from potential bitch tit syndrome. Not terrible since I'm constantly active but there and belly button area is where all my bad fat/flab goes to, nowhere else.

I know that's where most older guys have their problems but I'm also genetically predisposed to those areas. I can be dialed in on a diet and it won't matter. I can be cutting, etc. It won't matter. I tend not to cut anymore because then I feel achy, tired, joints hurt, etc and lose muscle.

Even if I get to 200lbs, (which I probably should lose Maybe 10lbs anyway) it's still an issue.

It's definitely diet. But do I cut out carbs? Am I sensitive to carbs? Like maybe I don't need as much as the average person? I don't really go crazy on junk food or sugars, ever...so I'm sort of stuck.

Any guys over 40 figure out how to shut this problem down who are genetically predisposed to this, relatively speaking? I know age will always be a factor.
