TM Rudders way too sensitive... help!

I have the Honeycomb Alpha and Bravo along with Thrustmaster Rudder Pedals (yep, I went on the cheap with the rudders but the Honeycomb pedals weren't available last Christmas). I am trying to teach my kids to fly and the use of rudder is so important. The takeoff roll has been dicey in the light aircraft and not great in the A320 (Fenix). I'm a rw Airbus captain but new to MSFS.

Can someone offer me the ideal settings for making sure the rudder is effective on the ground and in a crosswind landing? I have tried many different sensitivities but always the same results...
