Question about pH and organic soils

First time using coast of Maine stonington blend….

I know it’s an organic living soil. I know organic soils provide a pH buffer for water. I didn’t bother testing my water this grow because when I tested my tap water in previous grows, I was anywhere from 6.5-7.3…. So, I figured for this organic soil/dry amendment grow, I’d be fine with this pH.

Well, I have some yellowing from the bottom up on a plant that is 22ish days old. I decided to test my water again. Its consistently coming back between 7.7-7.9 over the past two days.

20 days of this pH locking the good stuff out at this point?
