Vegan Morocan meatlessballs with babaganoush and homemade chilli sourdough

For the meatballs I used a blend of jackfruit, mushrooms, dehydrates soy and a spoonfuls of seitan...it tasted lovley but I've decided I don't rate seitan it makes the texture spongy. Anyone else find this? I can never get better than shop bought vegan meatballs. Sourdough is jalapeño and smoked paprika..
