Why call it "harvesting"?

Full disclosure, I'm not a vegan or vegetarian, I like rabbit meat a lot actually(never raised them though) and I stumbled on this subreddit.

I have to ask, why do people here insist on the euphemism "harvesting"? What is wrong with calling it what it is, "slaughtering" or "butchering"? To me it seems cowardly to obfuscate the fact that you are indeed taking the life of a sentient being, by using that term.

"Sentient" a buzz word from a 1630's philosopher. If you go strictly by the definition most plants have sentience. When you boil it down sentience is just an awareness of stimuli.

But to answer your question, personally, harvesting is the entire process, slaughtering is the part where you kill the animal and butchering is the processing of the meat.
