Meal prepping for someone who doesn't eat fruits and vegetables

I'm trying to get healthier. I have always been active and my lifestyle has made up for my crappy diet, but I am wanting to change that.

I do not eat fruits and vegetables(potatoes are the exception). I don't like rice either which I know is a popular meal prep item. Meats are fine and I have no food allergies or anything else like lactose intolerance.

Cooking is something I am slowly getting into so even if meal prepping is a very involved process, that is fine.

I do not need to hear how childish I am for not eating these things.

I do not need to hear how things can be hidden in meals or how "you can't even taste it"

I am not going to explain myself and why I don't eat those things.

I just want to make a positive change in my life and am looking for help.

If you feel there is some insight you may have that can help me, I would greatly appreciate it. In past scenarios my way of dieting was just trying to eat cleaner and severely limiting caloric intake. I have had success with it, but it doesn't feel healthier.

  1. I can eat sweet potatoes and I can do fruit smoothies. I do take advantage of those the best I can, but it is in small quantities. I can also drink fruit juices.
  2. I know my issues with this stem from a mental issue
  3. I am consistently trying new things as well as things I have tried in the past. I wish I could eat fruits and vegetable, but I cannot. Perhaps one day I will find something I can tolerate and add it to my meals.
  4. I am looking for meals, different prep methods, and interesting way to make my current diet a little healthier and allow me to be able to prep meals for a week at a time.

I appreciate all who have commented and given me very helpful feedback. I intend to take all of this and build a plan for myself as I research a lot of the advice and ideas. There will also be an update post after trying this for a couple months to see how things are going.

I am autistic, so I have serious issues with a lot of food and a pretty restrictive diet. I also have food intolerances. Because of that, there are quite a few fruits and veggies that are not on the menu for me.

That said, I think declaring that you will never, ever eat fruits or vegetables is likely short sighted. There are so many different varieties and each item can be cooked in different ways. There is no way you have tasted every fruit and vegetable prepared every way in existence.

I think it might be wise to identify what is your issue with particular fruits and vegetables and experiment with addressing that issue. To be clear, I am not asking you to explain yourself to us, but to yourself, item by item.

Example! For me, raw broccoli is a no go. It is too bitter. But, if you put some olive oil on it and put it into the oven until it is slightly burnt, I am down. Roasted broccoli is significantly sweeter.

Oranges are also a no for me. I don't like the texture. However, I am down with pulp free orange juice. I am also down for pineapple which has a lot of the same nutrients.

There was a long time where I wouldn't eat apples because I didn't like the way they stuck in my teeth. However, I am down with sliced apples which usually don't have the same problem.

There are some fruits and veggies that are a never for me. I hate watermelon and cantaloupe. Something about the way it squishes. Grapefruit is a no go. I don't like it raw and I don't like how it taste inside other things. It tends to make other stuff taste bad. I have never had greens(turnip or collared) that tasted good no matter how much pork they slather on them.

There are also lots of fruits and veggies that aren't native to this part of the world that I would like to try. I have never had star fruit. I have seen kiwi but I have never tried it.

At the end of the day, food is better than not eating. So, if all you can eat is meat and potatoes, eat that. However, I encourage you not to reject all fruits and vegetables outright. Try new things; you might find something you like.

I am going to second smoothies. I tend to buy them rather than make them, but it really helps increase my fruit intake.
