Why didn't the Rebels use droids?

I've been playing Jedi Survivor and a thought has occurred to me Droids can be mass produced and if properly built and utilized they could lay waste to their enemies. The Rebels could have conquered entire planets and gain a serious advantage by using them. Plus, droids don't need sleep, food, or possess the other limits of humans. Sure, the Empire could go after their factories but that'd make their moves predictable and easy to counter.
