Question about Season 3 finale SPOILERS

So,in the finale for appetizers,Christine made Thai Papaya Salad with Crab and Mixed Vegetables and Josh made Butter Poached Lobster.Joshā€™s dish was more complex than Christineā€™s but he undercooked the lobster.Christineā€™s was more simple but she pretty much nailed the execution.What baffles me is that Gordon and Graham argue that even though Josh didnā€™t execute the dish properly,he had the better appetizer because he tried to do something heā€™d never done before.They even make the admission that he didnā€™t cook the lobster properly but that he should win that round because he ā€œwent out on a limb for the finaleā€.Joe says that he canā€™t reward people who donā€™t execute what they set out to execute and that even though Christineā€™s dish was more simple herā€™s was better because it was cooked correctly.The first time I saw this part,I was so confused,like yeah he tried something different but he didnā€™t do it as well as he could have,i.e undercooked.Am I crazy here?
