Turned black trying to dry them

My husband harvested a bunch of wavy caps and we're wondering why they turned black? He typically dries them out air drying, but he tried drying them on the lowest heat temp in the oven and they turned black. Are they ruined? Is this normal? Any advice is greatly appreciated!
