Anyone have experience growing Jack Frost

My 2nd time growing and was hoping someone can tell me when the best time to pick the Jack Frost. Last Thursday there was 1 barely sprouted on 1 cake. The other cake nothing was sprouting. Here we r 8 days later. From pics I've seen on the internet they should get longer stems? Thanks
