Advanced Date and Time settings missing from Ventura's Language and Region Settings?

I'm trying to find where the advanced Date and Time settings have been moved to in Ventura's new System Settings dialog.

In previous macOS, these used to live in Language & Region > Advanced..., and then the Date and Time tabs could be used to set custom date and time formats. This was very useful to, for example, set the date to ISO8601 format, instead of being stuck with the default for my region.

Have these settings been moved somewhere else? Is it still possible to set them using another approach, such as in a plist somewhere?
